October’s wine club is inspired by food. The Thanksgiving long weekend really defines this month for me, a time to lovingly prepare a glorious groaning board of dishes for friends and family. Thanksgiving dinner features traditional fare that span the entire flavour spectrum of sweet (yam casserole), sour (cranberry sauce), salty (the subtly salty brined turkey), bitter (Brussels sprouts), and umami (rich, savoury gravy). Dinner demands fine wines that can handle a challenging but happy chaos of flavour, taste and weight. If there is one single wine style that has a famed reputation for shouldering an entire meal, it is Champagne.
