Tantalus is one of B.C.’s elite wineries, best known for mouthwatering Riesling, and we deliberately held back enough of the 2015 vintage to let this bladerunner relax. Do try this local hero with Vietnamese take-out! You may not know the Aligoté grape, but it grows in Burgundy and makes lovely lemony whites; this beauty from Domaine Chevrot has just the right succulence for creamy spot prawns. We have two gems for you from Portugal—a country that fiercely celebrates its indigenous varieties. Vadio Branco is a dry, crisp white with citrus curd flavours, and Pé Tinto gets its lush, fruit-forward nature from tip-top Port grapes. And, to pair with a haul of B.C. spring Morel mushrooms, two streamlined Okanagan reds: a transparent Merlot from forward-thinking Lock and Worth, and a frisky Pinot Noir blend from The (always irreverent) Hatch.
