Vincent Paris adds a dimension to winemaking by giving new meaning to precision. In 1997, Paris released his first vintage and, while young, he showed signs of great promise. Paris would go on to be co-president of the Cornas appellation, controlling 8 hectares of vines. Paris grandfather oversaw vines as well, which were passed on to the third generation counterpart. At 90 years old, the vines were a gift of time and dedication. Today, Vincent Paris embraces his family’s sense of commitment, pruning four bunches from each vine, as opposed to the standard five to seven. Low temperature fermentation, and oak barrelling for 12 months, ensures that the high quality grapes are at their most expressive in liquid form.
