Nearly 500 kilometers north of Santiago where Chile’s historic wine industry started in the 1550s, lies the Limarí Valley. It’s a hot, extremely arid and very windy valley that is open to the Pacific coast. It’s also home to calcium-rich soils, and perhaps a little mysticism too, as the gateway to Chile’s Enchanted Valley. Tabali is a dynamic young winery that has embraced the rugged, parched environment of the north. Here Sauvignon Blanc vines yield small and flavourful fruit for this fresh, tangy wine. There is plenty of grapefruit citrus, with passionfruit and snipped herbs. Bone dry, with very ripe fruit, and racy acidity, try with this streamlined Chilean Sauvignon Blanc with spicy fish tacos, avocado soup, or goat’s cheese salad.
