This is chardonnay on the edge. The northern Limari Valley was formed by an ancient river bed full of complex gravels, clays and sands, and all-importantly, plenty of limestone. The funnel-shaped valley is open to the Pacific, which means that chilly winds whip through the vineyards, making chardonnay vines more like they are in cool Chablis than warm Chile. Very little rainfall, meagre soils and sustainable cultivation makes for highly expressive fruit, alive with high acidity yet lavishly ripe. A kiss of French oak brings spicy weight and complexity, boosting this luscious but streamlined chardonnay into rich food pairing territory. Crab, sablefish, pork chops or aged cheese are perfect companions.
