Parés Baltà Cava Brut Organico NV is sparkling wine from Spain, made in the labour-intensive champagne method. This one is from a small family winery, and as elegant as they come, for Spanish tapas or simple pasta.
Anthony Gismondi's guest note: Wild herbs, cracked stone dominate this well-made Cava, from a leading family in sustainable vineyard practices (organic and biodynamic). Dry and green apple crisp, with potent lemon peel, nuts and apple peel dominating, lifted with sharp acidity and cushioned by creamy mousse. Well-tended, this spends 18 months on the lees. Always a good sign to find on a wine list (means someone is paying attention to wine purchases).
Parés Baltà is a very special organic/biodynamic producer in Penedes, making wines from indigenous Catalan grape varieties. Their magnificent old vineyards are surrounded by a National Park; the wines are made by the wives of owners and brothers Joan and Josep Cusiné; neither woman had experience in wine before they married into the Cusiné family! Their Cava is light, clean and super-fresh in the best Catalan tradition. Made in the traditional method just like champagne, with bubble-producing second fermentation inside each individual bottle, it is astonishing value for money. Native grapes Parellada, Macabeo, Xarel·lo are the stars in is dry, appley, lemony, toasty, elegant cava. At one third the cost of champagne, you can enjoy frequently with steamed mussels, simple pastas or Spanish tapas.
