The Muñoz family has been making wine in the Noblejas region of Castilla for six generations. They own about eight hectares of vineyards (that’s about 17 Canadian football fields’ worth) where the average age of the vines is 30 years. Farming is pristine, the crop levels are kept very low, and only native yeasts ferment the wines. In other words, this is low-intervention wine, grown and made as naturally as possible. The wines are aged in an historic 17th-century underground cellar, where they quietly mesh and harmonize in traditional oak casks. Garnacha (known as Grenache in France) is planted throughout Spain, and makes silky, fragrant, red-fruited wines that reflect soils and climate brilliantly. This single vineyard Garnacha is grown on very poor calcareous stony soil, which increases stress on the vines, decreases yields, and increases the concentration of the wines. It’s then lightly burnished in American oak casks for a few months, layering dense red berry flavours with vanilla and spice, and gently smoothing the tannins. Try with mild food like pizza bianca, pork ragù, or succulent roast chicken.
