Taste in wine is highly personal, and as I have learned over decades of sampling wine, preferences can shift as tolerances evolve. For example, most of us are not born with a great love for bitterness and astringency, but exposure to foods like eggplant, radicchio, dark chocolate, and coffee build tolerance, and eventually one learns to find pleasure in the bite that firm tannins deliver. I did not much like Barolo (made from the tannic, high-acid Nebbiolo grape) when I first started drinking wine, but now I adore it.
These days I drink more sparkling wines that ever before, because there are sensational ones that are affordable enough to drink weekly. Same with Rosé, which is the world’s fastest growing category of wine. The best Rosés combine freshness and structure, and in general are dry, savoury, and SO food-worthy. High-acid whites are my go-to; I love their drive, energy, and crispness, and the way acid turns up the volume of minerals and fruit. And for reds: wines that possess crunchy fruit, brightness, a touch of funk (a little saddle leather), and cheeky tannic bite are what I crave. Plus a good story, of course. Wine is all about the stories.
