Jean-Marc Brocard Chablis Sainte Claire: this is as textbook as Chablis gets. Jean-Marc Brocard, who became a winemaker after his father-in-law bestowed a hectare of vines long ago, is a purist committed to letting mature chardonnay vines express the fossil-rich soils of the famed Chablis hills. The ‘Sainte Claire’ words on the label refer to a special plot of 30 year old vines, which deliver lean and steely classical chablis lines, with bright lemon, Granny Smith apple fruit and long, chalky finish. Pure, supremely fresh and with a typical saline note that makes it a seamless match with oysters on the halfshell, butter-fried sole, or linguini vongole.
