An historic name in Ontario wine lore, Henry of Pelham was an early settler in the Niagara region, son of a United Empire Loyalist who sided with the crown during the American Revolution of 1776. After independence was declared, the family departed hastily north and escaped to Canada. Henry established a prosperous farm and eventually planted some of the first grapes in Canada. In 1984 the vineyards were refreshed with higher quality European vines, like the Pinot and Chardonnay that grace this exquisite sparkler. Like the Champagne region, Niagara is underpinned with limestone, not quite as chalky, but with the right chemical makeup to bring out champagne-like acidity and mineral edge in Chardonnay and Pinot Noir. Bottle-fermentation followed by lengthy ageing on the lees shows in the aromas (toasty to the max!), flavours (macaron, apple danish), and texture (a gorgeous mid-palate creaminess). Do pay attention to the long finish that ends on a trailing note of citrus and limestone dust. And definitely pair with oysters or lemony grilled chicken. I’ve been judging the Canadian Wine Wwards for over 15 years, and Cuvée Catharine (Henry’s mother) is always in the top echelon.
