This grape and the volcanic terroir of the Aegean island of Santorini combine to make one of the world’s most interesting wines. The grape is Assyrtiko, and it is particularly suited to Santorini’s non-stop wind, torrid climate, and virtually rain-free growing season. To escape heat and trap dew, the vines are coiled into a bird’s nest shape on the ground, where the clusters of grapes are tucked into the ‘nest’ to receive some shade. Assyrtiko has extraordinary high natural acidity levels, which allows wines to take on a Chablis-like structure. Citrus, yellow apples, blossoms and mineral pungency grace the nose (a little like Chablis!), and the flavours are just as compelling, and wonderfully concentrated. Volcanic soils always show powerfully in wine, and you’ll note a salty, smoky, twangy finish. Made with no oak but plenty of lees-contact (again just like most Chablis) which adds creamy texture and toasty complexity. Sommeliers around the world have latched onto Santorini Assyrtiko, as it pairs gorgeously with decadent seafood like butter-poached crab or lobster, or you can dress it down with lemony grilled chicken. I visited Hatzidakis a few years ago and fell for the wines hard. Hope you do too.
