El Maestro Sierra - Amontillado 12 Year

Rich, nutty and mellow, Amontillado sherry starts out life as a Fino sherry, but then burnish in oak casks for years, becoming a completely different sherry. El Maestro Sierra’s Amontillado 12 Year sherry is the remarkable fusion of biological ageing under a veil of flor yeast, and oxidative ageing in old oak casks. The initial stage of the ageing was produced under flavour-imbuing flor yeast. During the first 6 years of its life, the wine developed under this layer of flor, where it acquired pungent, complex notes and a marked dry palate. After this, the wine was given a boost from neutral grape spirit in order to weaken the flor yeast and prepare for the second stage of the ageing: the oxidative process. The sherry was then moved to different oak barrels, and aged for almost a decade. During this maturation period, the pale colour became nut brown, the flavours deepened and the characteristic touch of oxidation appeared. Amontillados are extraordinary wines, complex and interesting. Bonedry with racy acidity, pair this fortified wine with smoked fish, mushroom crostini or toasted Marcona almonds.
