Cheverny (sheh-ver-knee) is in the gentle, green, bucolic countryside a couple of hours east of Paris, most famous for the turreted, fairy-tale castle, Château Chambord. The rolling hills are home to shaggy goats (who give us chevre), toadstools, and a carpet of vineyards.

Established in 1898, Domaine du Salvard is now farmed by the fifth generation of the Delaille family. They are committed to growing fresh, lively Sauvignon Blanc on the outstanding sandy clay/limestone soils of Touraine. Their lovely Cheverny Blanc evokes the famously crisp wines of Sancerre and Pouilly-Fumé, with plenty of their nervy raciness and lip-smacking freshness, but at a satisfyingly lower price.

Try this authentic wine pairing: take a slim log of goat’s cheese and cut into ½ inch rounds. Coat thickly in crushed walnuts and sauté for a few minutes (both sides!) in hot butter. Make a salad of mixed greens, toss in some juicy, halved grapes, and toss with a simple vinaigrette using the Cheverny as the acid. Top with a few of the warm, nut-coated chèvre nuggets. Pour a chilled glass, tuck in your napkin, and commencer à manger!
