Established in 1985 by renowned wine writer James Halliday, Coldstream Hills has become one of Australia’s most awarded, and most admired estate wineries. It is located in the Yarra Valley 50 kms northeast of Melbourne where, through proximity to the Southern Ocean Pinot Noir and Chardonnay thrive in extraordinarily cool growing conditions. The focus at Coldstream Hills has always been these Burgundian varieties, and a balanced, natural, non-interventionist approach to winemaking. Our Pinot combines ripe fruit from two elevations in the Yarra Valley, an elite region for Pinot in Oz. Winemaking is very deliberately ‘Old World’ in style, including the use of whole bunches and ageing in used and (only a little) new oak for nine months. The glorious result is complex, multi-faceted wine that emphasizes finesse and nuance rather than intensity and power. Plums, cherries, and wild berries combine with herbs, flowers, and dusty earth, but in classic Pinot fashion, the wines most delightful aspect is its silky texture. Serve with a slight chill (20 minutes in the fridge) and pair with rare-ish lamb chops, duck pâté, or herby oven roasted sockeye salmon.
