Clos des Fous Cabernet Sauvignon Würm 2013 is one of Chile’s elite wines, possessing the savoury elegance and finesse signature of Alto Maipo.
This masterful Cab from Chile is made by world-famous geologist ‘terroir hunter’ Dr. Pedro Parra - and he’s the only one who could get away with calling a wine ‘Würm’! Pronounced more like voorm, Würm refers to the most recent of the four glacial ages, and it’s the one responsible for the deep 450,000 year old alluvial terraces that imbue this wine with magnificent structure and stamp of gravel/limestone terroir. Alto Maipo is a corner of Chile’s main wine valley, where vines crawl up the foothills of the Andes, gum and Boldo trees scent the air, and mature Cabernet vines root deeply in their favourite soils. This arresting wine is pure Alto Maipo: intense cassis, minty, velvety tannins, and ridiculously refreshing acidity. Its potent fruit is draped with a touch of oak spice, and the finish is lingering and memorable. It’s complex, full-bodied and powerful, but with savoury elegance and restraint. If this were Bordeaux, Würm would be a classified growth. Pair with a premium cut of beef, prepared very simply but with a nice char. Let breathe in a decanter or big-bowled glass, and make sure the wine is about 18 C.
