Clos des Fous (‘the crazy guys’) is a star-studded partnership between Chileans Pedro Parra and Francois Massoc, and Burgundian Comte Louis-Michel Liger-Belair. Their goal is to make distinctive wines that celebrate the diversity of Chilean terroirs. The vineyard ‘Grillos Cantores’ is located in the Alto Cachapoal region, at the foot of the Andes, delivering very cold nights with significant temperature fluctuations. The terroir corresponds to alluvial, ancient soils, limestone and granite gravels, giving the wines powerful minerality and soft tannins. From a great vintage, the Grillos Cantores 2012 is a beautifully structured cabernet that combines cassis, graphite, savoury herbal notes and an intriguing earthy smokiness. It’s complete and balanced for sipping without food, but classic grilled beef with chimichurri sauce is what these three winemaker friends would choose for their expressive cab.
