The concentrated, immaculately farmed grapes display complex flavours of stone fruit, white peach, and apricot, with hints of floral and minerality. Careful partial oak ageing and lees stirring endows this wine with the structure to be aged for 3-5 years. Deploy it as you would an elegant chard, with lemony-sauced fish, pan fried oysters, or pasta with peas and mint.
