Domaine Bernard Defaix started in 1959 on two hectares of land in Milly, France. An ingenious method of spring frost protection was devised, and the winery used this newfound stability as a springboard. Bernard Defaix added to his four-generation legacy by tending to vines that his family had cultivated. Bernard’s expertise trickled down to his two sons, Sylvain and Didier, who manage the vineyards, winemaking and cellar. The expressiveness of the vineyards and wine come from the organic and biodynamic techniques used in production. The Chablis stainless steel fermentation is preferred over oaking, which is done sparingly. This results in wines that have a quality and complexity that is, at its heart, natural.
