South Africa makes serious and lovely bottle-fermented sparkling wines known as Méthode Cap Classique, or MCC for short. Almost 17,000 kilometers away from Vancouver, the Cape winelands enjoy a breezy, sunny climate, sandstone/shale/granite soils, and a long history of wine production. Planted in the late 1600s, vines in this high quality terroir showed their quality immediately. This bracingly fresh champagne-like blend is from Franschhoek, (the French Corner) in the stunning countryside north of Cape Town, often lauded as the world's most beautiful wine region. It’s here that Anthonij Rupert set up his wine farm, where vines thrive in the foothills of the dramatic Drakenstein mountains. The Chardonnay (55%) and Pinot Noir (45%) come from eight estate vineyards, and the painstaking champagne method is followed, including two years of ageing on flavour-boosting yeast lees. Gorgeously rich and refined, it’s also fresh and lively with a pillowy mousse and the kind of toasted hazelnut and biscuity complexity that you find in French Champagne. Oysters, anyone?
